How do you eat your mushrooms?

I've been a big fan of crimini mushrooms lately..
Here's how I cook them.
I get the pan medium, pour a little olive oil in, stir them up to coat the shrooms. Salt, pepper, ginger.. And then cook until firm but with slightly decreased size.
This way is the best I can think of for a cheap, fast, easy meal.
Served along side of rice, peas, and meat of choice.

Another way I LOVE cooking mushrooms is to fry them.
Bring olive to medium high(takes a little while)
Coat mushrooms with oil or eggs and roll in bread crumbs... drop in, and fry till golden brown. This simple technique works well for oyster mushrooms.

Mushrooms, you just feel good when you eat them..
How do YOU eat yours?

What mushrooms are safe to eat raw?
What mushrooms are BEST when raw?
Are 'Enoki' mushrooms worth $5 for a little bundle?
What mushrooms are worth the expensive price tag, cause I can't afford $40 a pound for morels or $20 a pound for french trumpets.
And sure as hell can't afford some sickening price like $200 a pound for truffles.

Portabellos make a good cheap choice for me when I'm not eating crimini, chanterelle, or oysters.
They are so meaty, cheap, and tasty...
I've always been told to scrape the gills off... is this the right way to do it?

the most bomby mushroom recipe i've ever made was porccini mushroom pesto


simply take several cups full of mushrooms(any mixture of porccini, portabello, or grey), 3-4 cloves of garlic, chestnuts/pinenuts. a cup of parsely, another cup of basil, salt, pepper, half a diced tomatoe, and olive oil. Put all of this in food processor, grind it up into a nice thick chunky sauce.

You can enjoy it over some sliced toasted french bread, or on some penne pasta with some diced carmelized onions and ground beef.

Tranceharper's Chanterelle Soup :::: " Yeah I am half polish /cough ... "


12 cups water ( 96 fluid ounces )

2 2/3 teaspoon salt

1 cup thick sliced cellery

2 thick sliced carrots

handful , 2 handful, or as many dried chanterelles as you like ( might beable to substitute other mushrooms )

dried / fresh florence fennel to taste

black pepper to taste

Small sprig ( just a pinch ) of Mugwort, or Culinary sage

1/2 medium onion OR 4 cloves ( not heads ) of sliced garlic ( in case of garlic add 1/4 cup extra celery )

1 stick of butter ( salted preferably, packaged butter, regular sized stick )

1 standard recipe Instant dumplings ( Bisquick or some such )

Directions :

add salt to water, and dried mushrooms , keep on very low heat for 1-2 hours or untill re hydrated, add sliced carrots , black pepper , mugwort or sage . florence fennel celery, onions ( or garlic ) and bring to low boil for 30-45 minutes , untill the vegetables are tender , and mushrooms rehydrated , melt the stick of butter in soup , bring to rolling boil , and make dumplings in soup as one would with any soup or stew , cook dumplings untill done, and enjoy

This consitutes the majority of my food intake for months during and following chanterelle harvest , a good german beer , with a spring of mugwort in it , goes nicely with this , as does my old fashioned ' Stone Rye ' biscuts, simple as can be , and keep for months, Mix beer , 1/2 rye flour 1/2 unbleched flour , and 1:6 Honey to Butter melted , untill its a very dense consitance ,greased cookie sheet, bake untill rock hard, I think these would probobly keep for a few months if one stored them properly ... That there is my favorite way to have mushrooms, Chanterelle soup , Beer with mugwort, and rye biscuts that would make eating some stones appear to be dentaly acceptable - Tranceharper

Your non-"active" types too. Enjoy the natural state of the organism. They wont taste that great cooked anyways + their nutritional value is pathetic

Mushroom Burgers.
Works well with most any mushrooms. I use button or portabellow.

Saute the mushrooms in butter and olive oil with onion and garlic. Add salt and pepper and mix into lean ground beef.

I usualy dont like "4% fat" ground sirloin but the onions and mushrooms add the moisture to these burgers and the butter and oil add the fat.

After you mix well, form patties and cook on a grill or in a cast iron skillet. Make sure you get a good crust on it because lean sirloin is just as good as a sirloin steak and steak is always best slightly chared.

Toast your buns and add real mayo to the bottom bun.. This will make a sauce as the juices from the burger run in and it tastes great.

i like mine simply sauteed until golden and caramelized. my favs are chanterelle and porcini if and when i can get them fresh. You'll be surprised at how theyre not as expensive as you think. especially with the wild varieties, a little goes a long way in terms of flavor, and no one except fancy restaurants in europe buy truffles by the pound, oz or per piece usually; remember, mushrooms are generally light, so a pound would be a lot in volume. 5 bucks for enoki? let me guess the hippie organic store thats always overpriced?? go to a chinatown or oriental store, they're much cheaper, as are a lot of other produce. You don't need to scrape the gills off portabellas, only if the color bothers you or effects the visuals of the dish, I actually rely on bella's dark spores to color stocks, soups and sauces naturally. Although when I sautee them i do remove the gills, by habit i guess.
