Any advice on using a pressure cooker ?

Ive just got an old mirro PC

nothing fancy, no gauge etc - just a little weight that fits on a stem on the lid- the weight says 'pressure 15 pounds'

this fits loosely on the stem on the lid- is this OK?
or should it be tight?

should I leave the steam hole open?

how much water should I put in?

when a tek sys PC for 1hour, is that from the time I turn the burner on? how high should the burner be?

any suggestions greatly appreciated

A couple things on the pressure cooker usage.
1) Water Amount - a water line about half way up any jars you are canning will suffice. Remember to have the jars elevated off the bottom of the pan by a towel, or rack, soas not to over heat them.

2) The gadgets - the black thing should go on the middle thing and should be loose. Make sure however you put it on, the bottom of the black part is as close to the metal lid as possible. It should just slide right on. The reason this is loose is because it is at the proper weight such that when the pressure inside rises to 15psi it will serve as a vent (by being lifted up that metal shaft it is on by the vapor pressure inside) and prevent over pressurization (and potentially dangerous situation).

3) How hot? - always always always when you get a new pressure cooker you dont know how to use, do a dry run first. Put the water in there and close the lid and turn the heat up slowly and try to get a feel for how it works. The proper way is to heat a pressure cooker up slowly to pressure and then adjusting it down/up to maintain the constant 15 psi. You can determine that by the amount of steam coming out of the black vent in the middle. A lot of steam is bad. Turn heat down. A nice medium between a buttload of steam and a little steam is good.

4) Other resources - Look up resources on the internet about canning and pressure canning.

I have a mirro as well, albeit a newer version.

the stem should be loose so that some steam can escape, DONT screw it on tightly.

the steam hole near the edge of the lid is for safety purposes. If pressure becomes too high then it will pop open and release steam, so dont open it.

after you put your jars into the PC fill up the water level so its 2-3 inches around the jars.

Put the PC on the burner and turn the heat to 'high'. When the gauge on the top begins to rock pretty violently, turn the heat to medium because your pressure is at 15psi. This is the point when you want to start counting down the hour. keep on medium heat for 1 hour (or a little more) and after that, let the pot cool for at least 40 minutes before opening. or, if you are impatient, run cool water over the pot for 4-5 minutes, then it should be safe to open.

I thought that the jars would crack when you run cool water over the PC when you have jars in it?

I had a jar crack from just letting the pressure out of my PC too quickly.

Ill be taking the slow & patient route for cooling-

another question Ive got is...

does there need to be any clearance between the tops of the jars and the lid of the PC?

Ive got pint jars and when I close the lid (on 4 jars) there doesnt seem to be much room - they slide a bit side to side, but if I shake the pc, they might be moving a few millimeters..
