Rapid Decompression?
    #4662446 - 09/14/05 11:22 PM (11 years, 2 months ago)

I was just curious if rapid decompression of your PC hurts anything (i mean...iv done it on almost every one of my past jars, and seen no bad side effects) i was just curious if anyone had anything to say bout this...iv never even had a jar crack...

I,ve never seen any bad effects from it, but I think it causes
the water to surge toward the release valve.

Not that I know of. I pull the toggle on my P.C. right after the cooking cycle too. I've heard some mention of possibly cooling the jars too fast, etc.. but in my experience it doesn't hurt a thing.

the purpose of a pc is to create a pressurized environment which increases the boiling point of water, allowing "boiling" at a higher temp. same principle of the radiator cap on your car. if you rapidly drop the pressure the water in your jars will boil and you could end up with a substrate thats too dry(that's why you don't remove a radiator cap on a hot car, because the coolant could start boiling and the steam scalds). and then there is always the whole exploding jar thing, but that shouldn't happen if you have holes in the lid

don't do it. i've had 2 jars explode and 1 crack in the pc'er, in 3 separate tries. I cooled my pc'er however by running water on it... go alton brown on good eats for showing me that trick! works great for roasts, is really bad for glass jars =)
