Chicken of the woods, chicken mushroom, sulphur shelf
(Laetiporus sulphureus or Polyporus sulphureus)
Chicken of the woods mushrooms should not be confused with "hen of the woods" (Grifola frondosa) or "fried chicken mushrooms" (Lyophyllum decastes group). The chicken mushroom is a spectacular wild bracket fungus that grows on tree stumps, often on sweet chestnut, oak, and beech. It grows into fleshy, knobbly clusters with shell or feather-like curves. The largest ever found weighed 100 pounds. This suede two-toned mass is unmistakable with its orange top and a sulphur-yellow underneath. When the mushroom is young, its thick flesh is solid and smoothly uniform, breaking into fiberless golden chunks. However, only the edges of new growth are tender enough to eat, having a tasty hint of lemony chicken. The mature specimens have a strong, pungent aroma and a coarse woody texture, making them quite inedible and allergy-provoking, causing nausea and dizziness in some people.

Nice find, I've been waiting for it to rain before I go back out and look for more.. Still got plenty left on ice though, I need some more edibles, if it would ever rain this miserable fall.

very nice...I found some a few weeks ago.  The first batch I found were really old and had tons of bugs in them.  The second batch was all good.

I actually did some agar work with them and made an LC.  Going to try to do a home cult of them.

Nice chicken mushroom. From the pic, It looks like they are still pretty young and moist. I live in Ohio, and I've found many, many nice chicken shrooms this season. There are actually two varieties....one with a bright yellow pore surface, and another with a white pore surface. Both varieties are equally good edibles. I have found some that weigh over fifty pounds. They seem to especially like Oak stumps and downed trees in my area. They cannot be dried, as they become very tough. However, They freeze very well after being sauted in butter for about ten minutes on medium heat. I like to cook them covered, as it helps to keep them moist. While on older specimines, only the outter edges are usually tender enough to eat, On young chicken mushrooms, you can often eat almost the entire mushroom. They grow incredibly fast, so if you see a small one, look back in a day or two and it should be perfect for picking. They can be used as a substitute for chicken meat in almost any recipie. They are very, very good and often an abundant source of food.
