Incubated too long - Newbie question. :/

My cakes have been incubating for a while, and today when I checked on them I noticed that tiny mushrooms have started growing already. I know when they start forming pins you're supposed to dunk them and everything, but since these are bigger (biggest ones are about half an inch) than the pins I've seen in pictures I figured I would skip the dunking and rolling in verm until after this flush because it would probably knock them off and I'd lose what's already growing. So my question is should I still cold shock them in the refrigerator before moving them to the fruiting chamber? If the refrigeration dries them out I can still spray them down with water from my squirt bottle. Sorry if this is a silly question, I just want to make sure I'm doing it right. :P

Since they are pinning ther is no need to cold shock them. that is a tecnique? used to initiate pinning. They should be fine for the first flush

Kotton, cold shock is not to initiate pinning. Cold shock (which, is really just dunking the cake in h2o for roughly 12 hours) is to re-hydrate the cake... so it has more to offer when creating the shroomies you know and love.
As for the pins in the jar, yeah... you seemed to incubate them for a lil too long. Does your incubator have direct light access (is your incubator dark, or is light in there?) Mushrooms usually start their growth when introduced to a light source so... check on that.

The only time I've ever had pinning in vitro was when my jars were exposed to light. On my first attempt at cultivation, I had limited funds so I didn't bother buying jars, and I just used the PF-Tek for Simple Minds page, which uses drinking glasses and tin foil. I had only 5 glasses which were appropriate, and so I used a 1 pint beer stein for the last. Well, needless to say, that thing took FOREVER to colonize, and I had all but given up on it. I set in on my desk (it took 2 months to colonize 3/4ths of the way, and stalled out for another week) and about 2 days later, I picked it up and started looking, and I had a 1 inch shroom at the top of the glass. I didn't see it until then b/c it was covered in tin foil. I had to lift up the edge to expose it. So that part was not getting any light, but the rest of the myc was. From what I've read, pinning is a hormonal response to light, and since all the myc is connected, the more mature myc at the top of the glass said, "Oh shit, light....time to bail!" I'm also a noob to some extent, but from all the reading I've done, this seems to be a valid reason for the in-vitro pinning.
