dunk them and it can take 5-14 days on average IME

dunk them, not in the fridge, then roll, then put them in a fruiting chamber a few degrees lower than incubating. That will still give one of the fruiting triggers without shocking them too much by being in the fridge and make them go a little faster. plus, lots of fae.(fresh air exchange)

time crunch. [Re: lemon_lw]

the three triggers to give the myc. so that they begin to fruit are:

-drop in temperature (to between 70 & 74 degrees)
-exposure to light
-fresh air exchange

if you give it those three things in optimum quantities (you'll have to research this yourself), it'll pin and fruit as fast as it is able.

p.s. on a personal note, i don't think that mushies like to be rushed. patience, and copious amounts of it, is the only way that you're going to succeed in this hobby. but don't take my word for it...

i say on average expect about 4-5 days to pins and another 3-5 days to full fruits if done right. Im assuming you're just using perlite for humidity and manualy misting/fanning them?
