Roasted cherry tomatoes on the vine

This is just an addition to a main meal or a first course but it's really tasty, looks shit hot and adds colour to the plate.

Take some cherry tomatoes still on the vine and place them in a small baking tray. Drizzle olive oil over them then sprinkle with sugar, salt, pepper and any other herbs you like (I like a couple sprigs of fresh thyme).

Roast it in the oven for 5/10 minutes until the tomatoes split then serve with your meal!

I like the idea. Definitely would add character to a plate.

I've tried loads of variations.

Some with balsamic vinegar , some with garlic and some with parmesan sprinkled over them.

All were good!  :thumbup:
