Mashed bananas
    #4624419 - 09/06/05 04:07 AM (12 years, 2 months ago)

This kind of happened by accident. I had put some pretty ripe bananas in the fridge to keep from spoiling. I took one out to eat and it was REALLY cold, so I decided to put it in the microwave for a few seconds to warm it up. When it came out it was getting really mushie on the outside.

I haven't really thought about mashed bananas before. Think they are mashed in banana pudding, not sure. But I figure I could find a new recipe for them. Any ideas what to mix in? They would probably make a good pie addition, or a crepe filling.

One idea I had, was banana cakes. Not sure how regional it is, but there are potato cakes, its mashed potatoes, mixed with flour to make them thicker, then made into patties and fried. Thought about doing that with bananas. Possibly nuking the bananas until they are mushie, mashing them with a little sugar and some flour to thicken. Put in the fridge to make them harder so I could form them into patties. Then fry them up. Figure I could either top with some type of cream sauce or some preserves, strawberry should work well.

What do you think?

Sounds pretty tasty. Go for it and tell us how it is.

Mashed bananas are often used to make banana/nut bread.

I'd say mash em up and drizzle with chocolate sauce, or top with crushed nuts, or both, when you have the munchies.
The crepe filling sounds like a good idea too. Perhaps mix in some diced strawberries as well.

Sometimes I take bananas and smash them up with sugar and bread in the mornings.
