Waiting to add Calcium Carbonate

Hi guys,  My cakes are soon to be cased..Tommarow hopefully.  Thats why I need to PC my Peat/verm today to allow cool down time.  I don't have any Oyster shells right now. And dont have time to get any... System and mars volta concert tonight :smile:  But 12 hour shift tommarow :frown:  lol  So anyways would It be ok if I sterilize the peat/verm tonight and add the buffer tommarow?  Also While im on the topic what ratio do you guys like to use for the oyster shell vs the pear/verm?... Im going 50/50 with that.

No, you need to sterilize it all..

I guess you could PC the oyster shells by itself...

If you can drive (or walk) go to PetsMart or PetCo, guarenteed they will have it..

It's in a cardboard box with a bird on the front..

3 cups Spagnum Peat Moss
3 Cup Horticulture Grade Vermiculite
1.5 Cups Crushed oyster shells

that ratio is way too high... you should use about 5-10% oyster shell... you are risking burning your myc original

And I would recommend not using as much as I did...

Well I guess its better to have my cakes go an extra day then risk contams... Do you think I could cool the casing in a shorter amount of time then 24 hours... Its not like im puting spores in it and im gonna be takeing it out of the jars.

Is there a reason you NEED to case today or tomorrow?

Cakes won't be harmed sitting an extra few days :smile:

I recommend just letting it cool by itself..

I guess you could let the pressure out of the PC (use a fork and pull the weight on the lid up) then open it and put it in the fridge.

MAKE SURE ALL THE PRESSURE IS OUT!!!!!!

But be careful and do it 4 or 5 times not all at once..

You don't want a pressure cooker exploding in your face... ever...


As long as you let all the pressure out you'll be safe..

And don't burn yourself...

You also should not PC casing material. A sterilized casing will contaminate much more readily than a pasteurized casing layer. Simply heat the casing material after moistening to field capacity to 160F for an hour. That is plenty. The bacteria that survive the pasteurization will help to fight off the green molds that will ruin your day.
