is it ok to store double bagged vacuumed sealed stuff in the fridge long term??

If it is 110% dry, it sure is...It will keep for a looong time...
If still wet then stick in a paper bag and no longer than around a week.

edit... You could also freeze them if their dry...

yeah i had them cracker dry and sitting for a week or so just plain single vacuumed....they may have softened a tad

Start collecting those silica capsules they put in medicine bottles and chunk a few in your baggie/container to keep them cracker dry
