How much time & temp in the oven to calculate moisture content of organic rye grain?
    #4581483 - 08/25/05 10:38 PM (11 years, 2 months ago)

I fuck up my first incubation so I will make some tests before wasting another syringe. I want to calculate the moisture content of my grain preparation. I will do different test with soak, soak+simmer, only simmer, soak+water in the jar, etc. I'm using "organic" rye grain and want to find what is the best way to acheive a 48-52% moisture content. Here is my question. How much time must I put the grain in the oven to dry them.. and at wich temperature ? I saw on a web site that I must put it at 265f for 16 hours! This sound crazy, to dry 5 preparations of 100 grams. This will take a big amount of electricity. What is your idea about this ? Somoene ever found another information on the subject, or ever try other method with sucess ? Thanks a lot!

Rye grain is usually about 10-12% moisture. I don't think it will vary too much outside that. So if 10% then 100g of grain has 90g of dry grain and 10ml of water, so to get a 50% water content you must add only 80ml of water since 10ml is already there. If 12% you only add 76ml of water per 100g.
I guess you got your figures from TMC, I questioned this low water content in a thread a while back, nobody seems to use that little water. Most go for 100-110ml water per 100g grain which is a 58% water content in grain of 12% natural moisture.

I you still want to weigh the grain you could microwave it, just keep shaking the jar to ensure even heating. It starts to get a popcorn smell when it is nearly fully dry, be careful though, it can start to smoke. Keep weighing to see if it is still loosing weight.
If I was doing it in the oven I would just stick it in with some food I was cooking, maybe over a few days checking weight.
