Anyone got any good egg recipes. I'm getting sick of eggs, usually I'll make them overeasy or scrambled with peppers and cheese, but I need something new. How do you make your eggs?

I like my eggs hardboiled and crushed/mixed with mayo and murdered with tobasco sauce.

Serve that shit on some toasted bread with stacker pickles and you got yourself hot gross farts for a day and a half. It's well worth the delite of eating it.

zip lock bag
2 eggs
cheese
any other shit you have handy

boil enough water to cover the zip lock

put the eggs and all yer goodies in the bag - mix well

boil for about 13 minutes or until the eggs are done

1 pound sausage
bread crumbs or cornmeal
8 hard-cooked eggs
1/3 cup fine dry bread crumbs or cornmeal
1 egg, beaten

Divide sausage into 8 (2-ounce) portions. If using links, remove casing. On lightly crumb-sprinkled surface, pat out each portion of sausage to about 1/8-inch thickness. Wrap completely around 1 of the hard-cooked eggs(that you removed the shell from), pressing edges together to seal. Repeat with remaining sausage and hard-cooked eggs. Roll sausage-coated eggs in crumbs, dip in beaten egg, then roll in crumbs again. Place on baking sheet and bake in preheated 375?F oven until lightly browned, about 20 minutes.

Egg Sandwiches

break the yolk and fry an egg
take a pickle and cut it lengthwise
slather ketchup on a piece of untoasted white bread
lay down pickles on ketchup
lay egg over pickles
top with another piece of ketchupy bread.

My FAVORITE, but nobody else likes it. :frown:

Or, just poach 2 eggs.  Break up in a bowl w/ butter salt and pepper.  layer over toast.  Eat.

I almost made a post here asking if anyone knew how a good way to cook Quail Eggs. I got some from the asian market the other day and havn't cooked them yet.

Fry one or two eggs - add salt/pepper, whatever herbs you like
Toast bread of choice
Slather a nice layer of mayo on teh bread
Put a piece of cheddar cheese or two on the egg right before its done so it melts a little
Slap it all together, and you have the easy, super dank egg sandwich.

Sometimes I will add a tomato slice, diced peppers, and whatever else might be laying around. Ketchup goes great with eggs in any form.

Thanks for the replies. What I'm really looking for is different specific herbs/spices/etc to add to the eggs while cooking to give it a new flavour.

Dinky: That ziplock bag technique is interesting, the bags dont melt at all eh?

I like Greek-style scramble: 3 eggs, beaten; crumbled feta cheese; coarsely-ground black pepper; dill; sea salt; thin ribbons of spinach; thin ribbons of red onion; sliced garlic-stuffed green olives.

Saute the onions, spinach & olives until the onions soften, then add eggs & cook until firm around the edges. Add feta and spices, stir to scramble. I serve it on warmed pita bread.

That ziplock technique is especially good for cooking eggs while camping.. so you dont have to scrape the fuck out of your pots.

Possible herbs/spices to add - basil, thyme, cayenne pepper.. only good ones I can think of right now.

Heat some olive oil in a pan that you can also put in the oven, add some whole cumin seeds and gently toast (be very careful not to burn them or they will tast bitter) then crack eggs into the pan, spoon a bit more oil on top and put in the oven until the eggs are cooked as hard as you want.

I ate this every morning when I went to morocco--they cooked it in a tagine, this covered clay dish--it was so good 'cause the cumin was always so fresh and nutty tasting.

line a muffin pan with slices of thinly sliced proscuitto (deli thin) then saute some mushrooms in butter, maybe add some shallots and garlic, some chives, then spoon this mixture into the bottom of the ham lined muffin compartments then crack an egg into each cup. sprinkle some shredded gruyere or swiss cheese then bake until egg is done to your liking ( I like my yolks on the slightly runny side, when it just about to congeale). the ham becomes crispy and makes for an attractive presenation. If you have the time make some hollandaise and top it off. :grin:
I may actually make this right now, I'm fuckin' hungry.

anyhow, here's my asian-style breakfast egg rice.

Take a sauce pan, add a table spoon or so of olive oil.  Let it heat up for a bit.

Throw in 2-3 eggs, take the pan off the stove and let the eggs cook, while mixing it so it remains somewhat moist and runny, but make sure t he eggs are cooked.  You can put it back on the stove for maybe half a second just to get it all cooked, but keep it moist.

Add a scoop or two of freshly steamed rice into a bowl, add 4 table spoons of sesame oil, 6-7 table spoons of soy sauce, add the eggs on top, mix it up.

It looks basically like fried rice without any addition to it.  Very tastey IMO.  I like it with a side of kim chi or some bacon.

I made this simple dish today and it was fucking good and filling:

2 small red potatoes
1 medium onion
1 clove garlic
salt & pepper

cover that and fry in olive oil on medium heat for 20 mintues
add rosemary, basil, thyme or whatever

when onions and potatoes are nice and golden brown, add 2 eggs and mix it all together. Let it cook for a minute or two and then add some cheese. serve with ketchup. :smile:

1 piece of bread

take the cup
use it to cut a whole in the bread
eat what the hole was before it was the hole
put the bread in a skillet on med-low
crack the egg in the hole and flip it when the egg sets.
