spiffing out your chicken noodle soup
    #4571733 - 08/23/05 05:16 PM (18 years, 7 months ago)

Well lately ive just been tired of the regular old chicken noodle soup, im gonna start adding things to the soup to change the taste some, and ill be updating as i continue my quest, and end when ive found the flavor im looking for, run out of soup, or explode from over-eating.

so far, black pepper especially if freshly ground adds a wonderful flavor to the soup, not to mention a few dashes of soy sauce.

i once knew someone who would mix in ketchup, but have yet to try this. ill eat another bowl later tonight and let you know how the ketchup goes

anyone have any good additives for chicken noodle?

Try some worcestershire sauce. Not bad. Or maybe the smoked Tabasco.

Some fresh basil or dill
Slivers of roasted garlic
Chipotle hot sauce
Pepperjack cheese
Parmesean-herb croutons

um, maybe not the spiffing you're looking for, but I've diced a fresh shroom into soup. It's not especially tasty, but definitely not your mother's chicken soup.

my mothers chicken soup is delicious and doesn't need additives. im talking about canned crap that u can make in 2 minutes. the other takes too long(im lazy when i cook for myself, i only usualy cook cool shit for other people).

I tried the ketchup and its not that good, but muenster cheese melted into it is pretty delicious. yeah I used some lea and perrins worchestshire sauce in some and it was really good. I found a mix of black pepper, muenster, lea and perrins, and just a few dabs of tobasco makes a perfect mix. also if your cooking it on the stove, you can add other things like frozen shrimp, scallops, and mixed veggies, and it tastes so much better.

first of all, some more chicken chunks, chopped up celery,
then some thai, or any other hot peppers.

Brandy, sherry or white wine then reduce the soup to it's original consistency.

My childhood favorite: cover with a layer of Chee-Tos cheese puffs, let them melt a little bit, then spoon up soft/crunchy puffs with each spoonful of soup. Yummy.

use good chicken stock or broth instead of water to reconstitute. chopped truffles and/or truffle juice would be awesome, but indeed expensive.

I like a healthy portion of curry powder in my chicken noodle (and beef based) soups. I will often add >tbsp of curry powder and a 1/2 cup of water and then reduce back to the original volume to permeate the flavor throughout.

I'm also fond of doing the same with ramen. If I'm in the mood for something especially hot, I'll add a couple dashes of dried red pepper as well.

Actually, white or black truffle oil isn't that expensive nowadays and a little goes a long way.

I personally find the Boletus genus to be more satisfying with poultry dishes than truffles.

start with chicken broth/stock. saute napa cabbage & onion in clarified butter with garlic & then hit it with soy sauce at the end, add that to the broth & then the chicken. I am running this one this weekend.
