Sterilization how to insert spores

Ive read that when your sterilizing the shrooms in the boiling water. You poke the holes in the lid first and then cover it with aluminum foil.

Wont water escape from the inside due to pressure
leaving the spores unable to clonize due to lack of water.

cant you just poke holes in after if your careful and in a clean enviorment.

I hope you ment jars instead of shrooms. Just cover the holes with water proof tape (black electrical tape is good).
