Tray size to use when casing

Luckily I discovered yesterday that I neglected a couple of jars with grasseed/zoodoo mix in which I inoculated liquid media about a week ago. The jars were almost fully colonised so I decided to shake them. I can't emphasize enough that this tek is the status quo of cultivation, since it even works when neglected.
By the end of this week I will case the buggers and it seems that coco coir is the way to go, if I achieve to aqcuire it locally.
My Question would be which way would be more beneficial in your opinion?
-use smaller trays and more of them(separate) ones?
-or simply blend the jar contents with one another and create one large ocean of shroom?

Smaller trays, that way, if one contaminates you don't loose everything.
