After I have a jar that is completely colonized, can I place it in the freezer until im ready to use it?

or would freezing it, kill it?

Well, I don't have experience freezing mycellium, but it could be harmed due to ice crystalls breaking the cells. What I have done is to put them into the fridge at 4 C to 8 C. You can store them without problems.

Yes.
As Elektrolurch said, you can keep them in fridge for several months at around 4?C/40?F.
