dunking FAQ?

can anyone recomend me a good & detailed faq/documentary on dunking? when to do it, how to do it, etc etc. I've just got a bunch of canning jars & im ordering my spore syringes right now. so, help a newb out <3

dunk: put cake in water leave for 12-24 hours. before every fruit.
cold shock: put in fridge while dunking

i've read recently that cold shocking is not good for cakes. i've heard ppl say to dunk in room temperature. i'm nearing the time when i need to dunk.

completly submerged in water? just take it out of the jar when i see pinning, soak it in water for 12-24 hours? Ill do 18 to be safe. Then put them in casing? Correct?

i usually use bottled water right out of the fridge to dunk, that way the water's colder than room temperature for a while so tell the cake hey the temperature dropped a little, time for u to start ur stuff. but it doesnt stay too cold. i dont know, its just the way i do it. once u dunk ur cakes, roll it in some clean dry vermiculite. it being dry will help it stick to the wet cake when u roll it, then just keep ur humidity as close to 100 as possible and mist the verm on the cakes lightly every so often until the dry verm has soaked up enough water to transfer it to the cake. but u dont want to spray too much at one time because they can lead to little pools of water contams might find favorable for growth. i always put a pile of verm on the top of my cakes as well.
yea, u want it completely submerged while ur dunking it u can take it out of the jar a couple days after it looks completely colonized and ur pretty sure its all covered on the inside too, no need to wait for pins.
