Grain Jars incompletely colonized. Still safe to case?

Well my sincerest of apologies if the answers to my questions have already been answered. I attempted searching the forum, the site and the FAQ with only minimal success.

I have a few jars already noc'd (and seemingly a little wet). Unfortunately they've been sitting for quite a while (3-4 weeks) in appropriate conditions but have seemingly hit a stand-still (some about 50% covered, others less than 35%.) I know the rule of thumb is "let it sit" but I fear leaving them too long will cause rot or contam.. I've read that possibly placing jars in the freezer will cause them to "jump-start". That isn't the most convenient of options unfortunately and I'm unsure as to whether that would apply solely to jars that have yet to colonize at all (possibly killing the mycelium present and also freezing the jars themselves--remember, a little wet.) Well if you are so kind as to have read this far I appreciate your interest and any suggestions you might have.

If left with no other options, I suppose I'll attempt to case what substrate I have as best I can (any yea or nays?) Thanks again.

Putting them in the freezer would only slow them down. If there is tape on the lids, take it off. Someone who knows also suggested flipping the jars to me, but i don't remember who it was. If you really wanted too, i guess you could cut off the incomplete parts and use whats done but i dont suggest that.

yeah, try turning it upside down, worth a shot anyway, usually doesn't help that much. You can just scrape off the parts that arean't colonized, just make sure you get all of them off, take off a little of the colonized part too that was touching it. Try and keep it as clean as possible though.

You flip the jars if the bottom is uncolonised. All that does is seperate the cake from the bottom of the jar, letting air circulate to it and simulating growth there.
