Question about soaking rye grain.
    #4558785 - 08/20/05 01:24 PM (11 years, 3 months ago)

My rye grain has been soaking for about 18 hours now. The water hasn't even remotely turned yellow like shown in Magash's pictures shown  here . I was just wondering if the water starts to turn yellow nearing the 24 hour mark or if some rye grain simply doesn't turn the water yellow. Should I stop the soaking at 24 hours regardless of what color the water is? I just don't want any endospores to give me any trouble down the road. Thanks for any help!

Did you begin the soak in hot tap water? The bacterial endospores will germinate in warm water much better than in cold. I soak anywhere from 24 to 48 hours. By 48 hours you can usually smell the grains fermenting, but they're still fine to use.

Personally, I give a five minute boil after the soak to kill the live bacteria. That keeps the water from making your drain stink when you pour it down. The boil also helps by making sure the grains are hot when you dump them in the strainer to drain. If they're hot, surface moisture will evaporate off the surface of the grains, so they'll be dry on the outside when you load your jars. All the moisture you'll need is in the interior of the grains.

I just used room temperature water. I'm letting the rye soak in individual quart jars like in the above picture. I'll have to try warm water next time - but I was planning on simmering the grains before I load them up for the pressure cooker. Thanks for the info.

I have had grain start to sprout in 12 hours...
That sucks....
So many factors involved here....
Where I am now...I soak for 8 hours...then PC
I had to do a little readjusting from where I was..
Took a bit...but I got it now:)

Grain is some tricky stuff!!
Especially rye...I like birdseed better...
But...all is well...just have to be careful,,

I'm trying something new now..if it works..I'll post it...

Yeah, this is my first time with rye. I hope every thing works out. The jars are pressure cooking right now (I forgot to put aluminum foil over the top, hope that doesn't matter). I put warm water into the jars and after a couple minutes I actually noticed the water getting more and more yellowish. Thanks for the help fellas.

Sure thing. The jars are cooling in the oven as I type this and I plan to inoculate tomorrow morning. I'll get some pics when they show any signs of growth.
