Big mushrooms just contain more water than small ones, it is always best to pick shrooms once their veil tears and not wait till they get too big, or they will just suck out lots of stuff from the cake and no more shrooms will be able to grow.
You cannot die by eating shrooms, it has been estimated that to die you have to eat the equivalent of your body weight of fresh shrooms.
Go for the PFTEK if you're a newbie, you get a good yeld if you do it the good way, and yes you will have multiple flushes (usually 3).
