When to harvest

I'm new to the shroomery and need some advice from an experienced delver in mycology. I'm currently working on a crop of ecuadors and am using 2-liter terrariums with a very small air volume.Manual air exchange two-four times a day. The cakes (brown rice/vermiculite) have begun fruiting and i have heard that the best harvest time is right when the veil begins to break away from the stalk. My question is, should i immediately pick them at this point while others are still tiny or should i wait until some get big and have exposed gills and some are breaking away? If i pick one off of a cake with several tiny ones will this be damaging to the tiny ones? Also if anyone has ever grown the commonly available equadorian strain how big should they get? I picked one the other day right as it's veil was breaking that had only about a 2.5inch stalk that was relatively scrawny, cap about 1/2 inch in diameter, is this normal? Help me!

Yeah, wait until the little guys mature. Two and a half inches is a bit small for Eq's.

Just wait until you see the veil beginning to rip--with Ecuadors it may seem like the veil is about to break, but sometimes they'll keep on growing another day or two before it actually rips. This strain routinely produces fruitbodies that are 6-8 inches tall, and sometimes even taller than that. If you have other smaller ones that aren't ready to be picked, just be careful not to knock them over or bruise them when you're picking the mature mushrooms.
