will 10psi be enough?
    #4546611 - 08/17/05 12:25 PM (19 years, 5 months ago)

a friend just bought a pressure cooker but it only went to 10 psi... will this be enough if he leaves it cooking for longer than you would at 15psi?

from what i remember about 10psi PC is you have to leave the jars in there longer then if it were at 15psi,but if its a new PC i would recommend taking it back to get a 15psi PC,but I'm new at all this so listen to what others will tell you

This is what roadkill says about it
You can keep the 10 psi pressure cooker.
You just have to do it longer...instead of 20 minutes....an hour or more is good.

If you can return it.....you might consider doing that....and get a better one.

I leave my jars in my pressure cooker for an hour after cooking substrate.

mrdasani said this about it
I have a 10psi as well. It will work , cook at 1 hour time, medium heat, not low heat. Make sure you hear the steam coming out really loud, boil sound too. Then you can start timing. It is okay to cool of the pot with cold water and take out the jars imidiately as well.

i'm not sure on the temps.. as they are a friends project, not mine... if the temp is to low, say room temp (mid-upper 70s), will this slow down the growth considerably?

i just talked to him to let him know to increase the temps... maybe this is why there is no signs of growth yet... now it is in the mid 80s... good to go i hope. thanks a lot lakes

If you simply injected spores into wbs, three days is too soon to see visible growth. Upper 70's is plenty warm. Anything above 80 will lead to a higher contamination rate. If your air temp is 85, the temp inside your jars will be a few degrees warmer, and growth rate falls off very rapidly above 86F. I would recommend you consider 80 to be the maximum air temperature for use with grains. Personally, I keep quart jars of rye grain on a bookshelf at normal, air conditioned room temperature and they colonize in 2 weeks or so. The increased rate of contaminants above room temperature is not worth the extra day or two of faster colonization you will get. Hope this helps.
