That's the casing layer right? You don't want it to colonize that anyways. Put on a little more casing on the areas that are white and fruit immediately after that.

Theres a few possibilities, tough to say without having seen you do everything. I would say it boils down to its either packed in to much in the middle, or its being heated to high. If it doesnt feel warm in the center on the bottom, then its packed in more in the middle. Generally, most people first pour their poo into the container, in the middle, then their spawn, in the middle, then dump the verm on in the middle and spread it out. Instead of dumping everything into the middle, sprinkle it onto the casing, evenly applying it. It could also bee tha the casing is very thin in the middle, if theres an upwards indent on the bottom, so if you made the layers level to the ground, the middle would be thinner..you have to make the substrate level with the bottom of the casing container, and the casing level with the substrate level, and forget being level to the ground. And beyond that, condensation builds up in the middle, when you mist, you'll hit the sides alot, and water drips down around the side, making it better for mycelium to grow then the center of the casing which doesnt get hit with as much water.
I'd add casing mix to the sides.
