well you want your casing material to be moist just like the poo content, a few drops coming out when you squeeze it lightly. not just the vermiculite but the peat moss as well.
sure you can sterilize it in the microwave, a few minutes then stir and a few more minutes. i myself pasturize the casing material, either way will work. there are some that don't do either (pasturize or sterilize). some that don't even pasturize the poo.
you should add the verm in with the peat for the casing as the verm will help aid in moisture retention and airyness. also you may need to buffer the ph of the casing with some garden lime, crushed oyster shells, or some calcisand (found in pet stores in the reptile section). peat moss has a tendancy to be acidic (not good for shrooms) therefore it should be adjusted up to a ph around 7.
apply a 1/2" layer of the casing on top of the colonized poo, reincubate it until you can just see the myc starting to show, patch any aggressive areas lightly to give the rest of the myc a chance to catch up and then fruit away.
