remember to keep the opening a little loose during pastuerization to prevent gas build up. i dont think there should be much of a temp problem if you simmer it for 2 hours like it says in the tek. good luck.

what about wrapping all that shit up in a bag, in foil and put it in the oven.. and skip the water bath???

didnt dry mine out and i had it in the oven for over 2 hrs... worked fine for me twice now. just make sure you have the bag sealed and it wrapped up real good.

yeah make sure it doesnt have a nasty piss-like smell to it. if its aged out enough it should have a dirt smell just as prisoner said.
