i've been having problems keeping enough water in my PC. i posted about this about a month ago and got some useful tips but i am having problems again. i am using an all american 941. i even called fungi perfecti, and this is what they said. 2000 grams of rye to 1700 Ml water, in an autoclavable filter patch bag. let soak for 1 hour to 5 hours. put one to two inches water in pressure cooker(just below canning ring) let go for four hours. i did exactly this except i even added more water(about a gallon) so that i was about a half inch above canning rack. when i placed full bags into it the water become displaced almost all the way up the first layer of bags. i just turned my cooker off at almost exactly 3 hours because it started to smell funny(like it has when i've run oout of water before) i am letting the PC cool right now but will look in about 30 min to see if there is water left. i dont think there will be any. the only time that i have done bags succesfully was in a smaller all american and i had to use bricks to elevate the bags to allow more water in the bottom. i let my PC come up to steam very slowly and also let it come to pressure very slowly. does anyone know what i am doing wrong?

also(if these bags are not burnt or broken) does anyone think that a fully loaded PC that has only gone for 3 hours is enough to use the grain as spawn or would it contaminate?

Grain bags will work after 3 hours of autoclaving / pressure cooking. You might want to turn the heat down a bit while cooking. Cooking for four hours is pushing the limit of the range.. for water.. But just barely keeping 15psi.. with lower vent rate (less shaking of weight) you should be OK. If you have to.. place 4 or 5 coffee cups under the rack so you have enough water space without floating the bags in your cooker.

Sounds to me that you may have had the heat source turned too high. Causing too much steam to escape.

edited to say.. use of parrafin wax like that sold in the grocery store.. around the sealing area of your cooker and lid will keep the lid from sticking. Lightly tap with soft face hammer or wood block on edge.. or slightly heat to remove the lid iof it is stuck.

my heat is very low, my pressure gauge reads around 14.5 PSI.
i just tried opening it with a screwdriver and hammer to no avail. however i did use a small amount of vaseline as recomended before use. thankns for your help.

My lid gets stuck every now and then.

I use a large metal spoon...and pry (gently) between the 2 surfaces...where the clamps are.

thanks but i think my problem right now is getting my lid off. besides, that told me nothing i already knew nor mentioned anything as to why the inches of water i am using are not lasting me. not meaning to be offensive but i understand how PC works. thats why i am confused in the first place. because things are not going according to plan.

Man I have a Mirro and no problems yet...I'd check the rubber gasket (if yours has one) because if it's not airtight the steam will definitely escape.  I remember when I used the steaming method...I came back to a pot with white residue all over the jars and inside the pot, and no water :frown:.

he is using an All American 941

they don't have a gasket...they are metal to metal sealing.

Perhaps it's warped...did you try to cool it off to fast at one point?  I know all my frying pans are warped lol the eggs all fall to one side cuz I always toss the pan into colder water when I'm done with it.

If you bought it direct maybe they'll replace it for you; nobody likes a faulty pressure cooker :frown:

that same hammer was put to better use prying the lid :foreheadslap:
had i only thought of that first i would have saved myself from beating the shit out of my cooker.

now the verdict as to water:  i stopped it just in time.  not bone dry but lacking a puddle at the bottom of PC. and the bags werent burned but another 5 minutes and they would have been.

Is 3 hours really long enough? really really?  im gonna try it but i dont have much faith. GGMM says that 4 is required for a cooker that is crammed full. but if you guys (or girls) have experienced no problem with 3 when doing like 6 bags at a time then....(i am also at higher elevations)

and to solve the problem about running out of water this is how i fixed it before. i punched a multitude of holes into a sturdy pie tin to use as a lift, allowing water to penetrate my lifted rack rather than coffee cups that would not really allow that much more volume of water in
