Stalled jars... any point in saving them?
    #4509582 - 08/08/05 05:34 AM (11 years, 3 months ago)

Well... I've decided that my jars are stalled to all hell... depressingly enough. I think it is too moist inside. There's no water on the bottom of the jar, but there's noticeable parts where you can see moisture up against the glass where the rye presses on it, and it leave a residue behind. 3 Days ago I marked with a marker where myc growth was, and it has not moved at all... and I shook up some jars too that were around 30% (after 2 freaking weeks) and there's no noticeable growth on these either. I feel wet spot, but I'm not sure. I'll try to get some pictures, but so far there's no noticeable contam... and all jars definately have some myc growth. I just don't want to wait around forever for them, and I'm making up a new batch of rye tomorrow...

They are being incubated at 84F, they have gas exchange via holes in the lid... tyvek filter, were innoc'd 3 weeks ago with LC. It just pisses me off because they started out good, and now, blah. :\ Any ideas? Should I just dump em out? :'(

it might just be the strain or water content or humidity could be a number of things

Some of mine ended up looking like mud, but I loosened up the caps and turned them upside down and they started back up again.  After 3 weeks of no growth I'd toss em, but give em a shot.  Maybe put some Floyd on for them to listen to while they sit there

That's strange that you are experiencing such slow growth when you inoculated with an LC and your temps are in the perfect range. I'm thinking that most of your grains didn't absorb enough water prior to being noc'd up, but it's just a theory. I have had a couple of popcorn jars that showed no colonization for 2 weeks and then they suddenly took off. I think that it was a lack of moisture in my situation too.
