lowering temps for pinning

Everyones always talks about lowering temps to encourage pinning.

Well, even after my buddy's cakes were dunked and cold shocked in the fridge, they still refused to pin. Air conditioning was not possible where he was, and the average temp in the terrarium remained around 85F. So he started to put doubled ziploc bags full of ice into the terrarium. When they'd melt, he'd throw em back in the freezer and put a new one in. The terrarium temp went down to 73F, and the cakes started getting pimply like a 14 year old who worked the deep frier at KFC.

Just thought this info might help out other newbies that are working with cakes. I'm also curious how you guys without AC keep the temps down on your casings.

Cold shocks delay pinning (typically) on P.C mushrooms.

That's why you only cold shock woodlovers (like azures).

Cold shock didn't help...

Those bags of ice sure did tho...

Went from 50F in the fridge, Back to 80F+...Which they of course didn't really want to pin in, Then down to 73F, and viola, whatdoyakno, Pins...:smirk:

I was going to use something similar (ice packs for kids lunches) for my shiitake...
