i just put some colonized cakes in my terreruim. i used 1/2 pint jars and a brownrice/vermiculite recipe. the instructions i followed are at http://www.lycaeum.org/drugs/Tryptamines/Psilocybian/gg32/mmgg.htm#Culture . the cakes seem a little tall to me, i hope that is not a problem. the cakes colonized in about 1 month. i ought to start getting pinheads within the next week i expect.

my questions are, how long till i get a shroom that is ready to pick? about how many shrooms are in an ounce (if i pick them right as the cap starts to separate from the stem)?

ok and to answer your other question...
depending on how warm you keep your setup (and your strain), from pin formation it takes up to a week or so to get a good sporulating cap (for prints), if you pick em right as the veil tears maybe only 1-4 days.
