Ronco? Monitor? Dunking?

Hiya guys... Im almost done picking first flush from poo pan (8x8) srill have a few more guys that havent had the viel tear off yet... So far I have about 80 wet grams... I got a Ronco food Dehydrator today at the Salvation Army... Its a 7 tray Ronco dehydrator(no fan no temp settings:( I also have an old monitor... Im debating on which one to try.... its not like the shrooms need to be 'cracker' dry as seeing as I dont think they will be around for more than a couple of days anyhow... I just wanted them to dry so i oculd stick in a grinder and powder it up to put into a shake or choclate or what have you...
I was thinking for drying on the monitor To put shrooms on piece of paper towel and than another piece of paper towel ontop and tape the towel( than I put that ontop of the monitor in front of the ac...
Sound Ok? Im also thinking of sticking half the shrooms in the dehydrator and see what happens....
My other big question is when my poo pan is all done with its first flush... Than what? Do I duk a big ass 8x8 pan of myc? Or can I just cold shock it in the fridge?

Ronco's are OK. Ovens are OK. Heat above 200F is NOT ok.

( edit ) You don't need to cold shock them now, they are pinning and will do so until nutrients are depleted, moisture is depleted or a competetor organism destroys them.

For second flush should I tape something on the sides of the 8x8 pyrex dish for light doesnt get on the sides? i had a lot of fruits that popped up from the sides of the cake....Also, are second flush much bigger than first? And should I dunk and cold shock the fruiting brf cake i got going also? or just dunk (for how long) and put back in chamber?

-Yes, won't hurt, should help.

-In my experience, the second flush have bigger mushrooms but not as many.

-If it is in the middle of fruiting, no.  After the flush, I would dunk but not cold shock the cake.
