    #4468468 - 07/29/05 12:16 PM (11 years, 9 months ago)

This is my first time posting here, hello cooks, I want to smoke a
brisket this weekend, and have never done it before, I have done other
meats, I have either a charcoal, or a gas grill to work with, do any
of you,ll have a fav recipe to share? I got one from foodtv, but would
be willing to try something else, I,m not woried about having to buy different things for the rub, or sauce, Thanks, party on.

Mmmm, brisket. Want something different? Marinate as usual (if you intend to) and go out and get some applewood chips for the grill. There are actually a couple of different good woods to use for cooking, like mesquite chips, but applewood really stands out.

well , I did the dry rub, and I just used charcoal, and wet mesquite
chips, I think it was ok, but could have been better, I not going
to waste money on another brisket again, I,ll just stick to babybacks ribs, and ribeyes.

Ummmmmmmm! Brisket! You should beat the meat, (no pun intended) this breaks down the gristley part of the meat and makes it tender! Seal in aluminum foil to keep the juices in the meat, just before serving open up and place on grill! Yum Yum in my tum tum!

Trim fat to 1/4 inch thick - on the fat side.

Tenderize (beat) the thing with a framing hammer all over & on both sides - until its uniform in thickness (start on the thick end.

Smack on some dry rub, moistened with a tiny bit of liquid smoke.

Wrap in aluminum foil (lengthwise), seal all ends (tight).

Wrap it like twice more - with aluminum foil.

Insert meat thermometer.

Place on grill over medium high coals - flip every 10 minutes.

Take it off - where you like it (rare - medium rare - so on & so forth.

Gas grill is good for this because the heat is easy to maintain for the hours needed.

First you need to find the thickest brisket you can possibly get. Get a meat injector and some Stubbs BBQ Marinade. Inject the meat with Stubbs all over, it will plump up and this is how you can BBQ it for hours.

Make a dry rub using:
Salt/pepper
Cayenne
Chili powder
red pepper
paprika
garlic powder
a bit of sugar
and anything else you might have laying around.

Rub it on REAL good. Top and Bottom.

In a big bucket have your wood chips soaking and ready then turn the gas on only on one side, remove the grill grate and place a pan filled with half watter half apple juice in that spot. Put the brisket on the BBQ fat side up (for the first two hours)and throw on a good handful of chips, close the lid and monitor the heat so that it gets no higher than 250 degrees.

Every twenty to thirty minutes, lift the lid and replace the chips and put more juice/water in the pan. After two hours, flip the brisket to fat side down and inject again with more stubbs.

Keep the pan filled and the chips smoldering for the next three to four hours. and then your done..

The BEST smoked brisket youll ever eat.

Here are some pics from when I did this with a pork shoulder.
