storing jars after pressure cooking before inoc.

hello, its not clear to me wether you can store the jars after or before inoculaition (maybe both?) if you put them in the freezer? i want to inoculate tommorow, can i store the jars for a day in the freezer and if so, what safety measures should i take to keep them sterile? thanks.

I kept mine at room temp for a week before innoc once. If they're sterile they'll be fine, if not, you don't wanna grow in them anyway.

they're pint jars, rye. I guess i should close the lid if im gonna save them for tommorow? for now they're in the freezer each jar in a bag sealed which was previously sprayed with lysol. so, should i seal them? is freezing bad? and another thing, if time favors me i might inoculate it today, if kept in the freezer how much time would it take for them to go room temp? thx

just put em in a bag or put tape over the holes. I've waited a couple days at room temp and been fine

If its only overnight, I would have left the foil on and just set them in a cabinet or something till tomorrow. Don't wait to long. Grain jars don't hold up as well as BRF when it comes to storage.

and what about the lids? should i close them or let them loose, would it make a difference?

If i can't inoculate my jars immediately after sterilization i simply leave them in the pressure cooker with the lid closed. I've never had any problems with this method before. Good luck!
