I pc'd my white karo syrup and water in quart jars for 20 mins, but they turned yellow, sice they are caramlised are they no good now?

I haven't yet done any mushroom work at all but I'd suggest if its just yellow it would probably still work but there would be essentially less sugar. Assuming you have spare whatever your planning to make the liquid culture with I'd personally give it a try but if you don't stuff to spare I'd atleast wait till someone else posts here with advice.

Next time I'd suggest use a lower pressure setting on the PC.

I have just recently started using Karo, twice now actually and I encountered the same thing. It carmalises and turns a light to dark yellow color. I went ahead and knocked up 3 jars of the stuff and I do get growth, but nothing like I used to get with honey water back in the day. It is very slow, and not very dense at all. If anyone else has any input I think we would both appreciate.. Take care all.

When I mix karo I use straight hot water from the tap 145deg.F...
with the PC preheated and ready to go, I use a 10psi PC, It takes around 2-4 minutes to reach pressure, once it does I start timmen 15 minutes. Once time is up I turn off the heat and move the PC to another burner. 1 hour later pressure is 0psi I open pc and remove the karo jars with a towel gently swirl a couple times and set in a cabinet to cool till next day. They barely change any color, almost not noticeable. I've never had a problem doing it this way out of around 15 runs.

Maybe try it with one jar to see if it will work for you...
