Newbie needs help with pinning

I have not seen any pin heads, and I wanted to make sure I haven't done anything wrong. I wish I had a digital camera. I am trying to grow as many shrooms with possible without spending much more $. I also am keeping the temperature in check. I kinda dove in head first....
Batch #1
Done using shroom wizard's grow guide. I just cased (soil/verm) them in tupperware without any humidification. I spray them a few times a day. It's been 10 days since the lids where removed and no pin heads. I scrapped the surface of them with a fork a few days ago
Batch #2.
I took a big rubbermaid storage container and used the 50/50+ casin tek across the entire bottom of the container. I put the top on it for a week, and after a week I removed the top. I them put saran wrap over the top and put it in light. The mycelium was covering about 50% if the surface and in some spots was about 2 inches above the soil. After 2 days, I placed 2 20watt aquarium floursents over the top. It has been 2 days and the mycleaum has flattened out and turned brown I remove the saran wrap a few times a day, and the humidity guage reads 90%.
Batch #3
I took an 80 gallon fish tank and used the 50/50+ casing tek across 75% of the tank. I sectioned off the rest, put a tray in there with water and an airstone in it. I covered the top with saran wrap and put an aquarium airstone / pump in the tray with water. I also put 40watts of aquarium floursents directly over it. It has been 4 days, and looks like batch #2.

Well, if the mycelium is not completely bright white then somethings wrong. If it is REALLY big and then turns blackish that's not the right kind. It is contamination and is common.
I am assuming that you are casing cakes? Though it shouldn't matter how the substrate was colonized.
When you're having problems with contaminations you might want to use more smaller containers for casing. Also until you get it all figured out and experienced this is the prefered way to proceed.
As for light you can get by with having only an hour or so a day, but more doesn't turn.
But I think the problem that you are having is with too much mositure. Casing don't need as much moister as cakes. They won't dry out as fast and the casing layer itself acts as the micro-environment for the mushroom development. So as long as it is moist it should be okay.
A big indication that you have too much moisture is how the casing layer looks. If it is all matted down rather then being fluffy like, well as fluffy as it can get. ;), then it is not in good shape and it will most likely either get infected or something else undesireable will happen.
Once you assessed the moisture issue how about the temperature in the chamber? You keep the temperature up around 80ish when you are letting the myclium grow but when you are trying to get it to fruit you need to drop the temperature inside the chamber. It should be around low to mid 70s.
