A wild Mushroom Feast

I just got done eating the best mushroom meal ever, a combination of ALL fresh:

Porcini
White coral
Orange chanterelle
Red chanterelle

All of them seared in olive oil for a couple minutes.... Might I add that Georgia white coral mushrooms taste kind of like chanterelles.

Today I went mushrooms hunting and found about a quarter pound of white coral fungi, and the red chanterelles as well as some more orange ones. This porcini mushroom was given to me for free by a friendly chef. I followed his advice and sliced it thin and sauteed in oil. Might I add porcini mushrooms are GREAT!!

Porcinis and chanterelles are both delicious. I couldn't believe how strong a flavor porcinis have for being such large mushrooms. Dried porcinis and the water they are reconstituted in make a great sauce or stock. The smell of fresh chanterelles is so great- it's fruitier than any fruit I've ever smelled!

Ya dude, porcinis were just amazing. I like them better than chanterelles, but it's a close call. Coral fungi tastes kind of like chanterelles, but nothing like they smell. The white coral fungus here in GA has a very weird smell, not bad, but not good, just different, and strong.

I found them all except the porcini, which was a gift.

I outdid myself today again... just got done eating blackened FRESH tuna steak seared with sesame seeds, grilled shiitake and french trumpet mushrooms, with snow peas.
