case now or wait?

My substrate (1/2 pint, brf/verm) is about 75% colonized, but it seems to be stalled. No sign of contams, but its been over 3 weeks and no recent progress. I'm casing the whole cakes with peat/verm/lime. Should I go ahead and case, even though they're not fully colonized, or just wait, wait, wait? Should I case, but cut out the uncolonized part of the cake? I'm concerned they may be too dry--should I try to mist them in the jars? Im traveling late next month so I'm trying to harvest by then. Any help greatly appreciated.

What temp. have they been colinizing at? Also have you left the tape on the lids the whole time? If you still have masking tape on the lids, take it off. A FOAF colonizes her cakes w/out tape and they get to 100% within 12-15 days.

Oh yea almost forgot. Im not sure about weather or not casing before 100% colonization is a good idea, but I know its a good idea to wait for 100% before birthing them as cakes. My freind, is currently making her first attempt at casings so she's not in a position to give advice on them. But hers were 100% colonized before crumbling/cutting.

Hey thanks for the reply. The temp has been irregular--mostly 80D but sometimes it gets a little cooler or warmer. I've left the tape on. I'll take off the tape and see what happens.

The tape will make a hell of a difference. Trust me.
Next time around, if you've got a pretty sterile environment, inoculate your jars and leave the tape off the whole time. You'll notive much improved colonization times.

remove the tape when jars are 50% colonized, and place the jars upside down.
