innoculating days after pressure cooking
    #440727 - 10/29/01 01:28 PM (22 years, 11 months ago)

my friend had to go out of town for 2 weeks. before she left she cooked up a dozen brf/verm 1/2 pint jars. they are still sitting in the pressure cooker.
do you think that they will be ok to shoot up with spores eventhough they have sat around for 2 weeks.
they look ok from the outside.

It takes most mold spores about 48 hours (in a dark moist enviroment for gray mold- green mold grows in dark or light) to kick in. Three days is safer in my opinion.

it'll be fine. there isn't much of a "window" where the jar is good - so long as it is sealed and has been properly sterilized, it'll be fine. If they were left in the pressure cooker, not only were they sealed inside that but the aluminum foil was probably left on top of the jars too, so you haven't lost any moisture.
