Nutrients needed to grow mushrooms

I was wondering if anyone knows the nutrients that are required to grow mushrooms. In that I mean the vitamins, minerals, chemicals, substances, whatever that are required. Obviously we all know that BRF, or WBS, or Rye berries will grow mushrooms with varying abilities. All I know however is that WBS contains more nutrients then BRF for example. But what are those nutrients that one posses over the other to grow more/more potent mushrooms. What is white rice lacking that it will not grow potent mushrooms, but will colonize mycelium? Any help with this would be appreciated.

Forgive a newbie for asking a question in the advanced forum. I eat a breakfast cereal called 10Grain Hot Cereal made by Bob's Red Mill in Oregon.
The ingredients of this product are all WHOLE GRAINS, the list follows in this order.
1. whole grain wheat 2. rye 3. triticale (i think of tribbles when I hear "Quad-Row Triticale") 4. Whole grain oats (like Scotch Oats, not rolled oats) 5. Oat bran, (like this stuff needs more damn fiber) 6. Cracked Corn 7. barley 8. soy beans 9. millet 10. flax seed
I like this cereal cooked with dried fruit and lots of sugar.
But now that I've been reading about mushroom cultivation, it occured to me that this stuff might make excellent food for mushrooms as well.
You can order it direct from the mill, at a buck a pound. I get it in the supermarket.

Just be sure your cereal does not have the usual anti-fungal stuff in it.

I've not seen any cerial grains produced for human consumption that have an anti-fungal agent, most people that buy them are health concious, they wouldnt buy a 'tainted' product.

It may have some sort of preservative in it, not specificially anti-fungal, but it would not be beneficial.

I was thinking of the usual suspect preservatives which hit fungi's that show up in boxed cereal, such as Potassium sorbate, sodium propionate, polysorbate 60 (off the lable of Dutchess Mini Chocolate plated Donuts, known the world over for being wholesome and 'natural'). ((please note the word natural is in the context of Pamela Anderson's chest, as silicone is a natural product, like fibre glass)) The cereal mentioned in this thread probably is just fresh grain and would work great, but I was in a skeptical mood just then and Baywatch was on. Like I was sayen.

What I read was the list of preservatives in the product. It was listed on the wrapper as "Preservatives". The list actually went on for several more lines. I just figured if you really wanted to know what makes these things last forever, you would go out and by a package. If you really want the details on each chemical, I guess I could look it up in the Merck index, but Im back on a project, so in the interest of time, look it up yourself.

Oh, look... Polysorbate 60 is actually a nonionic surfactant used to make the things set up, like the totally natural chocolate like substance coating the 'donuts', also adding dandy anti-static propertys. Sorry about that. Im going to cheat and say Polysorbate is not the first thing I reach for in baking something. He's right though, it probably won't hurt mushrooms too much. Im just sayen that anything that goes in a box or bag from large food distribution centers needs to be checked over. It's your project, do what you want.
Here is the quote from the makers:
"We are frequently asked why we add potassium sorbate to our products. We do so for two reasons: like many conscientious food producers in the natural foods market, we wish to use natural ingredients to not only provide the freshest, best-tasting, most convenient products in the market, but insure their safety. There is no greater threat to the modern system of food distribution than undesired, even pathogenic, micro-organisms. Many people falsely think that if a product is totally natural, or even organic, it doesn't need protection. This fantasyland thinking has no basis whatsoever in known food science, and, in fact, just the opposite is true. We add potassium sorbate for two reasons: (1) to natural inhibit microbes, particularly mold, and (2) increase the potassium level in our products. We could have used other known polyunsaturated fats that have this inhibiting quality, but we chose potassium sorbate for reasons we make clear in the following section. " Like I was sayen, lunch is over.

i am familiar with Bob's Red Mill, i buy rye and millet from the them. they cater mostly to hippie health food co-ops, and they use only organic grain. nothing is added, except Blood Sweat and Tears, and maybe some Allman Bros.
i am looking forward to seeing the results.

Sorry, My quote was NOT from Bobs Red Mill, but the makers of Potassium Sorbate. I use Bobs Red Mill myself, an overall great line of products. I was on a rant and just picked the first entry on my list showing it was a preservative but it ended up confusing. I also look forward to the results. Like I said, That cereal will probably work fine.

Boondock-
I like that cereal cooked with dried fruit and no sugar. Mushrooms like it too. I have some half-pints in the Magash closet now that are a 2:1 mix of coir and 10-grain cereal. I'll post some pics tomorrow. I think you will like the results.

Ok, here are the pictures. As I stated in my last post, these are PF style cakes using ground coir instead of vermiculite. The coir was saturated to capacity, then a half cup, or multiples thereof, was measured out and a quarter cup of Bob's Red Mill 10 Grain Hot Cereal was mixed in. This was packed lightly into half pint jars and PCed for 90 minutes. Cooled. Inoculated. Birthed three weeks later.
The four large shrooms are Lipa Yai.
The cake with the radical pin set is Koh Samui. That cake produced two monsters first, that dropped their veils but the caps did not open. Once they were removed the rest of the pins took off.
This cake is Gulf Coast. There is also a Mexicube in there, but the picture did not come out well.
Another nice thing about this substrate mix, is that the mushrooms come off easily with little underlying damage. Think I am going to try this same arrangement replacing the coir with horse manure.
