fermented substrate

It seems healthly all over even on top so I put them into the freezer for 3 hours to kill the yeast but has anyone had any sucess with a casing that has partially started to ferment? It looks fine and keeps growing but smells like red wine? I smelled my vermiculite wet and it has a sweet smell(just out of the bag with water). Then the coco peat has another odd smell which I could imagine the two smells combined could smell like red wine(the coco peat was a gro brick). There is no noticable contam but the smell. So Im going to quarintine those casings from the rest but does anyone think Ican get any fruit or should I throw them away? I figure there is a contam but wouldnt that slow growth? Anyone try to grow out a contaminated (with bacteria or yeast) casing? We have more back ups but I just wanted to see if any fruit is possible.

HQ once had a sweety smell on a colonizing casing- she sealed the container and the stank air was making it stink. she loosened the cover, smell disappeared and fruited nicely. id just do what youre doing- wait and see... quarantine and watch.

i think the freezer was a bit dramatic though... could be wrong, but im against throwing stuff into the fridge/freezer for any reason (cold shock, etc). btu i do like the ben and jerrys cold :)

Most casings are full of bacteria and the bacteria tend to ward off other contams so this is good. Yeasts usually do not prevent fruiting but they do reduce the yield. Freezing does nothing to yeast except to suspend their growth while frozen.

guess what there wasnt a contam. it was just stank air. casings are about 50% covered in mycelium now, guess the mushroom gods have my back

also I will post some pics soon so people can guess what they are. the spores where originally obtained at stp which he claims they are hybrids(bullshit!). So the supposed strains are blue meanies and z. personally i think the z is treasure coast and the blue meanies i think are thai koh samui.
