How long does it usually take for cubes to mature?

From when you first notice them and they are about a half an inch tall, about how long before they are mature with the veil beginning to seperate from the stalk? (Temps at around 76-78 F , high humidity)

depending on a dozen variables, 3-9 days..should be 3-5, I had a slow strain once though..

What is the best way to water them while they are growing? I suspect they may be a little bit dry. Can I just try to mist lightly around them? Would this hurt the other pins? Should the casing be at field capacity or is that too wet?

Mist them and keep them at field capacity, near saturation as you can, without actual saturation. Mist from far away with as fine of mist as you can and let it fall onto the casing. Hydrate (and especially rehydrate) your casings with many smaller mists, rather then heavy drenching.

O.K. but what if tiny water droplets form on the mycellium surface?, is that O.K., or will that slow things down?

Water on the myc is bad IMO...from your pics in the other post, your misting that to heavily. Water causes the myc to grow...very fluffy and very rhizo...to much makes it grow way to rhizo though...making a good casing turn to overlay quickly...not a huge problem...but something to watch out for. A little less misting, letting the casing go through transpiration, will help it alot to slow veg growth and begin pinning..note what I was talking about here..rhizos getting fluffy then overlaying
