Mushrooms green in center of stem. Why?

I'm a little worried about my friends shrooms. When he trasported the jars to the terrarium they were all covered with white fungus so there was no doubt about contamination, but now that the mushrooms are poping out, the center of the stem reveals a greenish-white color. Also, one of the cakes in a small area has a very slight tint of green about equal to the yellow tint that the cakes get after they have aged.

Other than that, I have some questions.

What should the average diameter of the caps be when harvesting?

What do you do if out of a bunch of mushrooms which are grouped together only a few are ready for harvest, while the rest are still too small? Should one cut with scissors so that the others are not disturbed?

I guess it's bruising, but are the color of the stems supposed to be green in the inside?

Its a blue green and anything in your grow can bruise, the mycelium, cakes, casings, steams, caps, inside, outside. Bruising is fine, as long as it isnt alive, growing and spreading..it also shouldnt wipe off onto a cuetip. GREEN is GREEEEEENNNN, no question green, green type of green. And it wouldnt start growing on or in mushrooms..

Thanks for the help scatman, I don't think it's contamination.

Regarding my second question, let me rephrase it: If I don't have a 'pin set', should I wait until every pin has matured THEN twist it off, or should I take off the mature ones ASAP? I've read that leaving matured caps on the cake longer-and-longer just decreases the potency, that's why I ask.

My grow of Puerto Ricans were also green inside the stem. I dried them and they have no loss of potency or abnormal taste. I don't really know why they turned green.
