a long time...

as long as they don't dry out.

I have used jars that sat for over a month...before knocking them up.

^^^

Yer dont leave unsterilized jars layin around, i got a wicked cobweb grwoth happenin when i did that and made me sick in the stomach for an hour when i was cleanin them out.

Sterilized ones could be keep for ages i suspect but i use glass cups with alfoil lids so i need to use mine within a week to stop them dryin out too much and haltin growth later on in the incubation process.

Keep in mind that the longer you wait the more likely your jars are to get contams. Although a properly sterilized/stored jar SHOULD last for months (I have heard of someone using a one year old jar before), it doesn't mean they always will or that it will be good for them. There has to be some water loss/change in compaction happening over a long period of time. No need to re-cook them though in your case they should be fine, just not a good practice as a rule of thumb to work with month old jars. A few weeks should be no problem though.

Thanks a lot everyone. It has only been two weeks so I think that I will go ahead with inoculation.
