Well, when you strain, the bottom grains stay wetter then the ones at the top of the strainer..water evaporates off as well as drips off..a possibilty. The warmer ones could also dry out quicker, but unless its a pretty big difference in temps from top to bottom, I dont think that would cause you to notice a difference in dryness. Also when you simmer, the kernals to the bottom of the pot get hotter and absorb more water, if not stirred occasionally.

I let my rye sit for maybe 4 hrs. to drain in the colender. I live in an extreamly dry area. Some types of mushrooms will build up a wet layer on the bottom, but in time will suck it up. If it looks cloudy, your probably got Wet Spot.
