i'm growing cubensis, what happens if you don't pick the mushrooms for a while? how long can they stay growing on the cake before they go bad?

well as you probably already know its advised that you pick your shrooms right as the veil is breaking. 2 reasons on why you do.
#1 it is said that psilocybin stops being produced once the mushie starts to drop its spores, so it would make a mushie less potent in thoery cause its getting bigger with no more magic being added to it.

#2 once the veil opens it drops spores just making a big purple mess.

so now that we have covered that. i will say i have never let a shroom grow past this point so i really dont know a true answer but ill take a guess. i imagine one of two things will make the mushie grow no more. it gets so big it just falls off. it runs out of nute/water and just starts drying up and falls off. thats the best i can do.

If its left in a humid environment (ie, terrarium) then the caps will start rotting about a week or so after full maturity.

Also, the thing about picking when the veil breaks for more potency is just a theory. No proof yet. Personally I pick mine just as they're dropping spores.

spores are a mess
but If the mushroom are growing psilocybin is being produced no reason to suspect other wise

reason people pick edibles at veil break is because of the better taste
