Keeping shrooms fresh

Does any one know what happens when you put mushrooms in the freezer? Does it keep them fresh? Also, how do you freeze dry mushrooms?

If you put fresh mushrooms in the freezer it will rupture all the cell walls and you will thaw them to find a gooey mess. To freeze dry shrooms just put them in an air tight jar, in the freezer, simple. What happens when you freeze them is it keeps the oxidation rate to a minimum allowing potency to be saved for a time.

How long do you usually leave the shroom jar in the freezer? Do you pack the jar full? I heard that this is the best way to preserve shrooms, what do you think?

Drying them BEFORE you put them in the freezer and them sticking them in a zip-lock freezer bag has always worked well for me. Just make sure they are completely dry before putting in freezer.

I would pack the jar as full as you can get it, the more compact the better, but if you don't have enough to fill it thats ok too. Just leave them in the freezer untill you are ready to consume them. Given the relative time, effort and money involved freezing is the best method to preserve them. There are better ways, but they would be more expensive aswell.
