shroomery oyster co-op

i was just informed of a government contract that calls for 5,000kg/mo of dried oyster mushrooms (ostreotus). i am seeing if it is feasable to start a co-op of people that have a talent for growing these. i can do probably somewhere in the neighborhood of 500kg/mo. if you think you can produce a minimum of 250kg/mo, drop a line here or via pm so i can see if this is doable.

this would be a great thing... we are starting our farm with oysters now, working out the kinks, but really dont have the market to sell them.. more info would be great to make this a reality..

I am very interested in this beyond government contracts, which has hidden costs out the wazoo. A co op would be very useful to any small to medium size business. Say your customers want 20 lbs of maitake and 20 pounds of blue oysters a week. they require diffrent temperatures to fruit. But if we had something where everyone could post there needs and capacities then you could market others peoples goods as well as your own and when you overproduce you can unload fresh produce with out the losses associated with drying and waiting to sell your dry mushrooms. I am just starting out but it seems like fresh produce flow is just like cash flow in a business. If you produce a large amounts at far spaced intervals then there is noway to overcome the problem without huge cash reserves and produce reserves respectively. A co op could be the answer. So just brain storm. how would it work? who has had any experience with a co op? Something as simple as a trading bulletin board?
