Mexicana Questions

Hey guys.

I'm almost at the end of a twelve week wait for my nice Mexicana truffle growkit to grow and mature. I have no experience with truffles so could anyone answer a few of my questions?

The thing that has been worrying me the most about these babies is what theyve been through. I know they are quite susceptible to temperature, and unfortunately mine had to take a trip from London to Milan in the cargo hold. I've been told chilling reduces their growth rate, so should i wait a bit more? I can't send a picture, but i can describe it. Quite a few very dark truffles can be seen squashed on the side all round, but i can still see some quite small sclerotia on the bottom, where a bit of water is collecting too. The growth matter has shrunk considerably this past week however.

This brings me to my second question. There are three more days to go until my wait is over...but i'm impatient. Will they grow that much more these days or can i open them now?

Last question. I'm quite a party guy in the summer and i don't expect my harvest to have a very long lifespan, about a month. Can i just keep em in the fridge or should i dry them? If the latter is the case, what is the best method for truffles?

Leave them to grow as long as you can. Store them in the fridge, don't bother drying them.
I grate mine with the finest blades on a cheese grater and mix them with peanut butter or curry sauce.
You should read up about cloning the sclerotia. They are very easy to grow.
