I know basil goes with tomatoes.
Lemons go with fish.
I know Italians are big into oregano, but I don't know when.
The truth is I don't really know a whole lot about spices, or when to use them.

Which spices compliment and really bring out the natural flavors of which foods?

Well, I know that garlic is awesome with any type of chicken except breaded.

you can't go wrong with thyme.

It's really hard to say which go with which, it's all about balance and compliment. I mean nowadays it's chocolate and cauliflower, who would have known?

Thyme is certainly a regular in my dishes, as it's gentle and generic enough for plenty of dishes, especially anything tomato-based or any bean-based spanish dish. (I regularly cook italinish style or spanish style because the ingredients are easily available and they are heavy in the same flavors, such as garlic and onion).

Parsley, oregano, and basil can go with most Italian food. Basil is my favourite herb and I use it with chicken and in sauces all the time. It's quite common with chicken in several different cultures. basil can be used in red or non-red sauches rather easily with most sorts of pasta.

Lemons go with fish, lime goes with fish, tomato and red pepper go with fish... capers go with fish, butter goes with fish... Lemon also goes with chicken quite well.

garlic and onion work in most any italian or spanish dish. light on both, though, if you're making some sort of cream sauce.

crushed red pepper is good to have, as is peppercorn (if you prefer fresh ground pepper).

keep some extra virgin olive oil around, but dont fry stuff in it because it burns at a low temperature and makes your food taste funny.

i learned quite a bit about cooking by fucking up all the time and overspicing plenty of stuff. eventually you learn what clashes and what goes together well - im at the point where i can go to the supermarket and make up something new for dinner on the spot

Buy every spice you can find, but not the premixed stuff. Get raw ones. Leave them in a line and several times a day smell them, taking note of the different aspects of the scent. Sounds silly, but it helps a lot - you get a solid concept of what they're like and which are compatible (you'll notice similarities in flavors, contrasts, etc... sage and thyme share some southwestern taste that makes me think of Native Americans, thyme and basil both share a minty taste, and so on).

Nothing beats experimentation though. Use recipes only as a guideline, never measure anything out. Measurements cripple the art of it.

cubicidal, good advice, though a bit extreme...

I never measure with things like teaspoon and tbsp, i just add as i think would be good, and if i fuck up ic an taste it and learn accordingly...

unfortunately im rather bad at estimating volumes so when it comes to something like making rice, i need to measure out the rice & water or itll get all fucked up

fresh chopped dill goes with many fish..i.e. salmon, trout, herring

crown dill (dill flowers) goes well with crawfish (if you ever cook crawfish there in az :grin:)

in my opinion...

cayanne pepper or garlic salt goes well with corn
rosemary, thyme, freshly ground pepper goes well with oven baked potatoes
bayleaves with pork chops or roast beef

etcetc

Ah, rosemary, I forgot of her - Rosemary goes well with anything chicken based, of course...

Hmm... cumin and tumeric go with some middle-eastern and indian style stuff.

allspice, coriander, and cloves go with things that need a-sweetening, like mulled wine or chai. Chai is much better if made with darjeeling, coriander pods, and cloves rather than some pre-made powdered shit.
