After sterilizing the substrate jars and before inoculating them should I keep them in the dark for 1 to 3 days or just keep them out in the open?

Doesnt matter...most prefer to use them right away..i usualy wait 3-14 days before using them. Dark or light doesnt matter.

It really doenst matter so long as you have tape covering the holes. Just give them time to cool down and then inocculate.
