science fair

i have had growing experience but have never have grown gourmet and i was thinking about growing gourmet for a local science fair. Does anyone have any thoughts on any good strain i could realistically grow in normal temperatures/without composting. Any thoughts on what i could do that would be very interesting would be helpful.

Shiitake is a nice one. All the substrate you need is wood pellet fuel that they use for kinds of stoves.. its like 3 bucks for 40 pounds

Oysters are faster than shiitakes and have vigorous mycelium. You could just grow a few pf jars and crumble them into some straw and once the straw is fully colonized, you can fruit that.
